Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers, brewed for Christmas. It has a very potent beer (12% alc/vol). It has been boiling for many hours, brewed with pale malt with white candy sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging hasn't decreased the quality of this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

For more than 35 years we had to miss the Christmas beer but in 2002 the tradition was restored with Gouden Carolus Christmas. It’s a strong, dark ruby red beer with character and contains an alcohol percentage of 10.5 % alc.vol. Brewed in August, the beer rests a few months to reach an optimal balance. Three kinds of hops and 6 different kinds of herbs and spices define the rich taste of this Christmas beer. Top-class!

WHAT DOES IT EVEN MEAN ? Simplicity and quality of ingredients are the key to brewing this traditional British style well. We chose a blend of Golden Promise and Maris Otter, two heritage barley varieties from the UK dating back to the 1960’s, and added a touch of English caramalt. Staying true to its roots, we layered two quintessential English hop varieties into the boil, Fuggles and Goldings. WHAT YOU NEED TO KNOW THOUGH Gluten free. Biscuit and toasty malt flavors with a rustic character and a gentle hop bitterness for balance. Medium-bodied with a smooth mouthfeel and a crisp finish for ultimate sessionability. Earthy and woody notes from Fuggles, delicate floral and herbal notes and a slight spice from the Goldings.

Vinterbloss! Winter smoke, winter flare, winter sparkler, winter puff of smoke. One thing we can all agree on is vinter means winter. The rest is up for debate. We just enjoy quirky Swedish wordplay that’s hard to translate, is that okay? We thought it important to brew a little compliment to the seasons. Our Vinterbloss Rauchbier is a smokey ode to the darker days of the year. A Rauchbier’s not a Rauchbier without beechwood smoked malts from Bavaria and we’ve blended these with some darker malts for an extra roasted bitterness and added Diamant and Tettnanger hops from Germany for a little herbal complexity to round it all off. It’s a smokey winter delight, a vinterbloss if you will.

House of Pale is one of the recipes we’ve taken from our beloved mad laboratory in Copenhagen, BRUS. A New England pale ale with Ekuanot hops. It has seen many changes and tweaks over this year, experimenting with hop doses and overall ‘crispiness’ - and now we’re pretty sure we’ve got exactly what we’ve been looking for.
